Title Maximizing value of dairy application using whey by enzyme processing
Detail Whey is one of dairy ingredients which is abundant in lactose, but it is converted to mono-saccharide by processing with lactase and it gives some positive effects on dairy applications. We will introduce some application examples with lactase.

Title Utilizing animal by-products with enzymes
Detail Meat/Fish extracts are often used in soup stock, but most of them are produced by hot water extraction. In that case, high amount of protein still remains in the residue, but it is mostly wasted or used as feed. We will introduce how it can be utilized by processing with proteases.
