Detail | A new method is proposed for evaluating the early stage peroxidation of oils using electron spin resonance (ESR). It is simple method with irradiation at room temperature, without using spintrap reagent. The peroxyl radical generated from the peroxide in the oil by irradiation reacts with the Vitamin E (VE), and gives the VE radical (VE・). The peroxidation level of the oil can be estimated by the ESR signal intensity of VE・ |
